Saucy Meatballs
Growing up I remember coming home from school and walking into my house…. and the smell of dinner cooking and candles. It was just cozy and smelled like home. Now I'm all trying to recreate that for my boys….they don't seem to get it now but maybe in 20 years they will look back and remember *that* smell.
This entree my Mom made monthly. It's easy, you can make ahead, and delish! Just keep in mind they do have to cook for 1 l/2 hours so making them ahead of time works excellent. The sauce too! Simple ingredients that not even my boys will complain about. Know that when I post a recipe I rarely go by it 100%. So if and when I change it I will let ya know!
Saucy Meatballs
1 1/2 lbs ground beef
(I always use 2 lbs)
1/2 C milk
2 tsp salt
1 tsp pepper
1/2 package of crackers. I rarely have crackers bc my boys devour them. So I usually use bread crumbs or dry oatmeal. Even left over rice will work. This time I used around 1/2 cup old fashioned oats.
Sauce
1 cup ketchup
Half a cup water
1/4 cup Worcestershire sauce
3 tablespoons chopped onion
Two tablespoons of vinegar (White)
1/3 cup of brown sugar
Tabasco to your liking.
Grease 9x13 pan. Mix all ingredients for the meatballs shape into 1 1/2 inch balls.
Bake at 350 degrees for 30 to 40 minutes. Drain if needed. Cover with sauce and turn oven to 325 and bake for another hour.
It's so good and so easy. I served them with baby potatoes and brussel sprouts. Enjoy!!
